In a world where we hear “have breakfast!” It is constantly surprising how many people I meet on a daily basis who do not actually “eat breakfast.” What’s even more surprising is that most of them say the same thing: “I don’t have time.” Well, it’s time to make time and a great way to do it is with a breakfast casserole. It’s easy, good for you, tastes amazing, and will help you feel and look your best. This is a great set of things to do, but it’s all true.

First is easy. And I mean easy. Just add your favorite cooked meats and vegetables to the bottom of a casserole. Next, for a nice, smooth mix of 12-15 eggs and milk (I actually use coconut milk!). I also usually season my egg mixture with salt and pepper. Cover the entire casserole with the cheese of your choice and put it in the oven. I bake my breakfast casseroles at 350 degrees for about 45 minutes. Just keep an eye on it and take it out when the cheese is golden brown and crisp and the center of the casserole has a firm movement.

To make this casserole really easy, I suggest making it on Sunday and heating it up throughout the week. You just need a few seconds in the microwave and you’re done. You can even cut a portion and heat it up on a muffin or English omelet for an instant breakfast sandwich or breakfast burrito. There are so many great combinations that make it interesting. My personal favorite is the sausage, mushrooms, spinach, and cheese. I’m sure you will find a favorite too.

So how is this good for you? First of all, eggs are a great source of protein and healthy fats and vitamins. Vegetables are a great place to get some energy and nutrients. And dairy is also a good consistent source of protein-based energy. Coconut milk can still bring a lot of calcium and vitamins to the mix if you want to avoid dairy. The sausage and bacon are questionable, but with so many great options in chicken or turkey, you can really take some of the blame away here. The biggest benefit you’ve ever given yourself really comes from “breaking the fast” that your body enters during sleep. You’ll find more energy and balance throughout the day with a low-carb, high-protein breakfast.

All that’s left for us is how this can make you look good too. Well, the biggest impact this breakfast can have is that it’s real food that you made. If you can push yourself to get most of your meals out of your own kitchen, you’re doing great things for your health. I bet your waistline will look better, your metabolism will speed up, and you might have some energy left at 5 for walking or exercising. It is certainly a tasty form of “diet”.
